Courgettes have been in season for a little while now, and this popular summer vegetable is still finding its way onto our plates. If you’re not able to enjoy your own home-grown courgettes, never fear – you can buy them most of the year at the supermarket. However, locally grown varieties are particularly flavoursome during the summer months. There are no limits to what you can do with courgettes: they taste great stuffed, sautéed, grilled, roasted or deep-fried. Thanks to their subtle flavour, courgettes go beautifully with other vegetables and make a great addition to pasta dishes, meat and fish. They are particularly low in calories, making them ideal for low-carb meals.
