Advent squares with chocolate shavings

  • 200 g almonds
  • 250 g soft butter
  • 150 g icing sugar
  • 1 sachet of vanilla sugar (8 g)
  • 4 eggs (medium)
  • 150 g plain flour (type 405)
  • 1 tsp baking powder
  • 125 g white chocolate shavings
  • 100 g milk chocolate couverture
  • 50 g chopped almonds

  1. Pre-heat the oven to 180 °C. Line a baking sheet with greaseproof paper.
  2. Put the almonds into the blender jug and, with the measuring beaker in place, chop for 10 seconds/speed setting 8. Decant and give the blender jug a quick rinse.
  3. Put the butter in the blender jug and, with the measuring beaker in place, mix for 45 seconds/speed setting 4 until frothy. Add the icing sugar and vanilla sugar and, with the measuring beaker in place, stir into the butter for 1 minute/speed setting 4. Use the spatula to scrape the mixture down the inside of the blender jug.
  4. Add the eggs and, with the measuring beaker in place, stir for 35 seconds/speed setting 4. Mix the flour and baking powder and, with the measuring beaker in place, mix for 1 minute/speed setting 4. Then add 100 g chocolate shavings and the almonds and, with the measuring beaker in place, mix into a smooth dough for 45 seconds/speed setting 4.
  5. Spread the dough on the baking sheet and bake on the middle shelf for approximately 20 minutes. Wash and dry the blender jug.
  6. Allow the cake to cool. Place the chocolate broken into pieces in the blender jug and, with the measuring beaker in place, chop for 12 seconds/speed setting 8. Then, with the measuring beaker in place, melt for 4 minutes/speed setting 1/50 °C and then spread on the cake. Decorate with chopped almonds and the remaining chocolate shavings. Allow to cool and cut into little squares.
