Apple and radish salad

  • 1 shallot (20 g)
  • 1 bunch of radishes (300 g)
  • 1 apple (150 g)
  • 1 yellow pepper (150 g)
  • 100 g sheep’s cheese (45% fat in dry matter)
  • 1 tbsp olive oil
  • 1 tsp mustard
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp lemon juice

  1. Peel and halve the shallot, place in the blender jug and, with the measuring beaker in place, chop for 10 seconds/speed setting 5. Use the spatula to scrape down the inside of the blender jug.
  2. Trim, wash and dry the radishes. Trim, wash and roughly chop the apple and pepper. Put the radishes, apple, pepper, sheep’s cheese, olive oil, mustard, salt, sugar and lemon juice into the blender jug and, with the measuring beaker in place, chop for 10 seconds/speed setting 5. Season the salad again and serve.

TIP

Decorate the salad with chive rings and chopped walnuts.
