- Pre-heat the oven to 180 °C. Grease the spring-form tin and sprinkle with a few fine breadcrumbs. Wash the apples, cut into eight segments and remove the cores. Place the eggs, sugar, baking powder, flour and cinnamon in the blender jug and mix for 30 seconds/speed setting 6.
- Pour the sponge mixture into the prepared spring-form tin. Arrange the apples evenly on top, then bake in the hot oven for 40 minutes. Carry out a skewer test using a wooden cocktail stick to check whether the sponge is cooked.
- Remove the cake from the oven and leave to cool in the baking tin, then carefully run the blade of a small knife around the edge to loosen, release the spring-form and remove the cake. Allow to cool completely before cutting into slices and serving.
