Apple fritters in beer batter

  • juice of 1 lemon
  • 2 tbsp rum
  • 2 eggs
  • salt
  • 50 g sugar
  • 1 tbsp oil
  • 250 ml light beer
  • 200 g flour
  • 500 ml oil, for frying

  1. Wash and peel the apples, cut out a generous hole through the middle using an apple corer, then slice the apples into 1-cm thick slices. Place in a bowl and sprinkle with lemon juice and rum.
  2. Separate the eggs. Place the egg whites and salt in the blender jug, insert the mixer attachment and whisk until stiff for 2 minutes 30 seconds/speed setting 4. Transfer to a bowl and refrigerate. Clean the blender jug. Blend the egg yolks, salt, sugar, oil, beer and flour in the blender jug for 1 minute at speed setting 4 into a smooth batter. Fold in the whisked egg whites and blend for 10 seconds/speed setting 3.
  3. To make the fritters, heat the oil in a large saucepan or deep frying pan. Remove the apple rings from the bowl, draining briefly, then dip in the batter and fry in hot oil for 2 minutes each side. Remove the golden brown apple rings from the oil and drain on paper towel.
