Apple fritters in beer batter

- Wash and peel the apples, cut out a generous hole through the middle using an apple corer, then slice the apples into 1-cm thick slices. Place in a bowl and sprinkle with lemon juice and rum.
- Separate the eggs. Place the egg whites and salt in the blender jug, insert the mixer attachment and whisk until stiff for 2 minutes 30 seconds/speed setting 4. Transfer to a bowl and refrigerate. Clean the blender jug. Blend the egg yolks, salt, sugar, oil, beer and flour in the blender jug for 1 minute at speed setting 4 into a smooth batter. Fold in the whisked egg whites and blend for 10 seconds/speed setting 3.
- To make the fritters, heat the oil in a large saucepan or deep frying pan. Remove the apple rings from the bowl, draining briefly, then dip in the batter and fry in hot oil for 2 minutes each side. Remove the golden brown apple rings from the oil and drain on paper towel.
