Baked apple smoothie bowl

- Put the almonds and raisins in a bowl, cover with water, and leave to soak overnight in the refrigerator. The next day, drain the almonds and raisins, reserving 200 ml of the soaking liquid. Wash and quarter the apples, removing the cores, and put them in the blender jug with the almonds, raisins and cinnamon. Add the soaking liquid and process the mixture to a thick purée for 2 minutes/speed setting 8, increasing the setting gradually from 5 to 8. Divide the mixture between 2 bowls.
- For the topping, wash the apple, remove the core with an apple corer, and cut the apple into thin rings. Interleave the apple rings on top of the smoothie and sprinkle with cinnamon. Sprinkle the granola around the sides of each bowl and serve immediately.
