Basic white sauce
- Put the butter in chunks in the blender jug and, with the measuring beaker in place , melt for 2 seconds/speed setting 2/ 90 °C.
- Insert mixer attachment, add the flour and, with the measuring beaker in place, boil for 3 minutes/speed setting 1/100 °C. Then remove the mixer attachment.
- Add the warm stock, and with the measuring beaker in place, blend for 20 seconds/ speed setting 6.
- Then, the measuring beaker not inserted, simmer for 10 minutes/speed setting 1/100 °C. Season to taste with salt and pepper.
Season the sauce if desired with nutmeg or lemon juice. You can vary the sauce by adding grated cheese, freshly chopped herbs, tomato purée, mustard or grated horseradish.
