Blinis with avocado cream and feta

MAKES 25 BLINIS

  • 200 ml chilled milk (fresh whole milk 3.5% fat)
  • 1 tsp honey
  • 10 g fresh yeast
  • 200 g plain flour (type 405)
  • 100 g buckwheat flour
  • 2 eggs (medium)
  • 2 vine tomatoes (200 g)
  • 2 ripe avocados (400 g)
  • 1 garlic clove
  • 1 tbsp lemon juice
  • ½ tsp salt
  • 2 pinches of pepper
  • 200 g feta cheese (21% fat)

  1. Put the chilled milk and the honey into the blender jug. Crumble the yeast in and, with the measuring beaker in place, heat for 2 minutes/37 °C/speed setting 1. Add both types of flour and the eggs and, with the measuring beaker in place, mix for 30 seconds/speed setting 4. Use the spatula to scrape the mixture down the inside of the blender jug and mix the batter again, with the measuring beaker in place, for 30 seconds/speed setting 4. Decant the batter and clean the blender jug.
  2. Wash and dry the tomatoes, cut into quarters, and remove the seeds and cores. Place the tomato flesh in the blender jug and, with the measuring beaker in place, chop for 5 seconds/speed setting 5. Then decant.
  3. Halve the avocados, remove the stones, peel off the skin and put the flesh in the blender jug. Peel the garlic clove and put it into the blender jug. With the measuring beaker in place, finely chop with the turbo button/2 seconds. Use the spatula to scrape the mixture down the inside of the blender jug. Then, with the measuring beaker in place, chop everything finely again with the turbo button/2 seconds. Use the spatula to scrape the mixture down the inside of the blender jug.
  4. Put the diced tomato into the blender jug with the lemon juice, ½ teaspoon of salt and 2 pinches of pepper. With the measuring beaker in place, mix everything together with the reverse button/20 seconds/speed setting 2.
  5. Pour a little oil into a frying pan and add 1 tablespoon of the batter at a time. Fry the blinis on both sides until golden.
  6. Serve the blinis with the guacamole, crumble a little feta on top, and serve.
