Broccoli salad

  • 600 g broccoli
  • 1 red pepper (150 g)
  • 50 g pine nuts
  • 3 tbsp apple cider vinegar
  • 4 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp mustard
  • 1 tsp salt
  • ½ tsp pepper

  1. Wash, trim and pat the broccoli dry and divide into florets. Put 300 g broccoli florets into the blender jug.
  2. Wash, trim and quarter the pepper.
  3. Add the pepper, pine nuts and remaining ingredients to the broccoli in the blender jug and, with the measuring beaker in place, chop for 8 seconds/speed setting 5.
  4. If necessary, repeat the procedure, with the measuring beaker in place, for 5 seconds/speed setting 5.


You can also use 150 g each of broccoli and cauliflower florets and replace the pine nuts with sunflower seeds, walnuts or cashew nuts.
