- Using a sharp knife, slice open the vanilla pod lengthwise and scoop out the pulp. Mix the vanilla pulp with the other ingredients in the blender jug for 30 seconds/speed setting 5. Shape the dough into a ball, wrap in plastic wrap and chill in the refrigerator for 1 hour.
- Pre-heat the oven to 180 °C. Roll out the dough onto a floured work surface to a thickness of 3–4 mm, then cut out biscuit shapes using cookie cutters of your choice. Arrange the cookies, a batch at a time, on a baking tray lined with baking paper and bake for 10 minutes until golden brown. Remove from the oven and leave to cool on a wire rack.
