Caesar dip

MAKES 2 JARS (200 G EACH)

  • 1 sprig of rosemary
  • 3 sprigs of thyme
  • 1 garlic clove
  • 20 g Parmesan (32% fat)
  • 1 tsp capers
  • 1 anchovy fillet
  • 1 tbsp olive oil
  • 1 big pinch of salt
  • 1 big pinch of pepper
  • 1 tsp sugar
  • 1 tbsp lemon juice
  • 1 egg (medium)
  • 1 tbsp coarse Dijon mustard
  • 200 ml sunflower oil
  • 100 g crème fraîche (30% fat)

  1. First ensure that all ingredients are at room temperature.
  2. Wash the rosemary, shake dry, remove the needles and chop finely. Wash the thyme, shake dry and remove the leaves from the stalks. Peel the garlic clove, remove the rind from the Parmesan and cut in half, and rinse the capers and anchovy and drain.
  3. Put the rosemary, thyme leaves, garlic, Parmesan, capers, anchovy, olive oil, 1 big pinch each of salt and pepper, sugar and the lemon juice into the blender jug and, with the measuring beaker in place, mix with the turbo button/5 seconds.
  4. Use the spatula to scrape down the inside of the blender jug and, with the measuring beaker in place, mix again with the turbo button/5 seconds.
  5. Use the spatula to scrape the mixture down the inside of the blender jug. Add the egg and the mustard and, with the measuring beaker in place, stir for 10 seconds/speed setting 3.
  6. Then, with the measuring beaker in place, set the appliance to 4 minutes/speed setting 4. Start the appliance and then pour the sunflower oil slowly onto the lid of the blender jug so that it drips inwards along the measuring beaker insert. Slowly increase the quantity of oil. The dip should now have a fine creamy consistency.
  7. Scrape everything down the inside of the blender jug. Add the crème fraîche and, with the measuring beaker in place, stir for 5 seconds/speed setting 4.
  8. Season the dip to taste with salt and pepper and, with the measuring beaker in place, stir again for 5 seconds/speed setting 4.

TIPS

This Caesar dip will keep in the refrigerator for approximately 3 days.

It goes particularly well with barbecued meatballs, poultry, vegetables and sausages.
