Cajun marinade

  • 2 garlic cloves
  • 1 chilli pepper, finely chopped
  • ½ tsp ground paprika
  • 1 tsp each of ground turmeric, ground cumin, ground coriander and ground allspice
  • 1 tsp lime juice
  • 1 tbsp maple syrup or clear honey
  • 2 tbsp coconut milk
  • 5 tbsp sesame oil

  1. Peel the garlic cloves and mince for about 7 seconds/speed setting 8. Use the spatula to scrape the minced garlic down off the sides of the blender jug. Add the remaining ingredients to the jug and mix for 20 seconds/speed setting 5.
  2. Marinate the meat to be grilled or barbecued for at least 12 hours. Season the meat to taste by brushing on more marinade from time to time during cooking.


This Cajun marinade is perfect for flavouring poultry. For a spicier result, simply add 1 teaspoon

of ground cayenne pepper and 1 teaspoon of freshly grated horseradish to the basic marinade.
