Carrot & Citrus Jam

- Peel and trim the carrots, then cut into 4-cm pieces. Peel the ginger. Wash the lemons and orange in warm water and then dry them. Grate the zest, combine with the brown sugar and set aside until ready to use.
- Squeeze the lemons and orange and measure out 125 ml of juice. Place the carrots and ginger together with the citrus juice/125 ml water in the mixing bowl and cook for 15 minutes/100 °C/speed setting 1. Add the lemon-and-orange sugar mixture and mix in for 45 seconds/speed setting 4. Leave the mixture to draw for 30 minutes. Then process until smooth for 1 minute/speed setting 8, starting first of all by 5-6-7.
- Add the preserving sugar and bring to the boil for 13 minutes/100 °C/speed setting 1. Test for setting, boiling for a little longer if necessary. Place in sterilized jars while still boiling hot, wiping spills from the edges. Seal the jars and turn them upside down for about 5 minutes. Then turn them back up and leave to cool completely.
