Concentrated chicken stock

  • 400 g chicken fillet, skinned
  • 100 g onions
  • 100 g carrots
  • 100 g celery
  • 100 g parsley root
  • 100 g leeks
  • 4 sprigs of mixed fresh herbs of your choice
  • 1 tsp dried marjoram
  • 1 tsp white pepper, freshly ground
  • 25 g sea salt
  • 2 tbsp sunflower oil

  1. Dice the chicken (into cubes, approx. 3 cm square), then place the meat in the freezer for 20 minutes. Divide into two portions and process one at a time in the blender jug for 25 seconds/speed setting 8. Transfer the minced chicken to another container.
  2. Wash, clean, dry and roughly chop the vegetables and fresh herbs. Place in the blender jug, along with marjoram and pepper, and process for 20 seconds/speed setting 6, using the spatula if necessary. Add the salt, 50 ml water, oil and chicken, then cook all the ingredients for 25 minutes/100 °C/speed setting 2, leaving off the lid of the filler opening. Finally, blend until smooth for 1 minute/speed setting 10. Transfer whilst hot to sterilised jars with twist-off lids. Close the jars and leave to cool. Store in a cool place.
