Concentrated vegetable stock

  • 2 garlic cloves
  • 100 g dried tomatoes
  • 100 g onions
  • 100 g carrots
  • 100 g celery
  • 100 g parsley root
  • 100 g leeks
  • 4 sprigs mixed fresh herbs of your choice
  • 1 tsp dried oregano
  • 1 tsp dried marjoram
  • 1 tsp pepper, freshly milled
  • 25 g sea salt
  • 30 ml dry white wine or vegetable stock
  • 2 tbsp olive oil

  1. Clean, wash, dry and roughly chop the vegetables and fresh herbs. Add them to the blender jug and sprinkle with the oregano, marjoram and pepper, then finely chop for 20 seconds/speed setting 6, using the spatula if necessary. Add the salt, wine or warm stock and olive oil, then cook all the ingredients for 25 minutes/100 °C/speed setting 2, leaving off the lid of the filler opening. Finally, blend the ingredients for 1 minute/speed setting 10 until smooth. Transfer whilst hot into sterilised jars with twist-off lids. Close the jars and leave to cool. Store in a cool place.
