Cream sauce

  • 1 medium-sized onion (100 g)
  • 30 g soft butter
  • 30 g plain flour (type 405)
  • 1 tsp tomato purée
  • 300 ml beef stock at room temperature
  • 100 ml chilled cream (30% fat)
  • 1 tsp Worcestershire sauce
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Peel and halve the onion and put it into the blender jug. With the measuring beaker in place, chop for 5 seconds/speed setting 8, then use the spatula to push the chopped onion down the inside of the blender jug.
  2. Put the butter into the blender jug and, the measuring beaker not inserted, sauté the onion with the roast button/3 minutes. Add the flour and tomato purée and, the measuring beaker not inserted, stew for 3 minutes/speed setting 1/130 °C. Add the beef stock and cream to the blender jug and add Worcestershire sauce, salt and pepper to taste. With the measuring beaker in place, process for 20 seconds/speed setting 6. The measuring beaker not inserted, simmer for 8 minutes/speed setting 2/130 °C. Serve hot.


To make a meat-free cream sauce, simply replace the beef stock with vegetable stock.
