Curry sausage sauce
- Peel the onion and garlic. Cut the onion in half, then add to the blender jug along with the garlic cloves. Process for 8 seconds/speed setting 6. Push the contents down off the sides using the spatula. Add the olive oil and brown for 4 minutes/110 °C/roast button. Add the curry powder, cayenne pepper and salt just before the end of the cooking time. Add the puréed tomatoes and all the remaining ingredients to the blender jug and cook without the filler lid for 15 minutes/100 °C/speed setting 2 until the sauce is reduced a little. To prevent the sauce splashing out of the jug during cooking, place the cooking pot on the blender jug lid. Season to taste, add a little more liquid (water/apple juice/cola) if necessary, then cook for a further 5 minutes/100 °C/speed setting 2.
- Transfer the sauce to sterilised jars or bottles whilst still hot unless required for immediate consumption.
To avoid the lid becoming stained by splashes during cooking, brush with a little oil before use.
