Egg liqueur

  • 6 egg yolks
  • 2 tsp vanilla sugar
  • 250 g icing sugar
  • 125 ml cream
  • 250 ml high-proof rum

  1. Process all the ingredients in the blender jug for 9 minutes/70 °C/speed setting 3. Using a funnel, pour the liquid into a sterilised bottle and seal with a lid. Store in a cool place.
  2. Once opened, the egg liqueur should be consumed within 4 weeks. This drink is a real classic which can be served neat or as a topping for desserts.
