Elderberry jam with plums

FOR 6 JARS (250 ML EACH)

  • 250 g plums
  • 500 g brown sugar

  1. Place the elderberries in a colander and rinse in cold, running water. Carefully pat dry, then strip the berries off their stems and place in a bowl. Wash the plums, pat dry and cut in half lengthways. Remove the stones, chop the fruit into small pieces, then add to the elderberries and mix well. Sprinkle the fruit with the brown sugar, cover the bowl and leave the mixture to steep overnight.
  2. Place the fruit and any juice in the blender jug and cook for 30 minutes/95 °C/speed setting 2, leaving the filler opening open. Check whether the jam has reached setting point and, if necessary, continue to cook a little longer.
  3. Transfer the jam to sterilized jars whilst still boiling hot. Use kitchen towel to wipe off any smears from around the rims without delay. Close the jars and stand upside down for 5 minutes. Turn the jars the right way up again and leave to cool completely.
