- Place the almonds, rolled oats, goji berries, dates, coconut oil, cocoa powder and salt in the blender jug and, with the measuring beaker in place, chop everything for 30 seconds/speed setting 6. Decant and, with slightly damp hands, shape the mixture into walnut-sized balls.
- Roll half of the balls in the desiccated coconut, and the other half in the chia seeds. Serve immediately or keep in the refrigerator.
The balls will keep for around 1 week in a sealed box in the refrigerator.
Alternatively, you could roll the energy balls in poppy seeds, ground almonds, cocoa powder or other seeds.
