Energy balls

MAKES 15 BALLS

  • 100 g almonds
  • 30 g rolled oats
  • 30 g goji berries
  • 150 g dried dates, pitted
  • 1 tbsp coconut oil
  • 1 tbsp cocoa powder
  • ¼ tsp salt

PLUS:

  • 1 tbsp desiccated coconut
  • 1 tbsp chia seeds

  1. Place the almonds, rolled oats, goji berries, dates, coconut oil, cocoa powder and salt in the blender jug and, with the measuring beaker in place, chop everything for 30 seconds/speed setting 6. Decant and, with slightly damp hands, shape the mixture into walnut-sized balls.
  2. Roll half of the balls in the desiccated coconut, and the other half in the chia seeds. Serve immediately or keep in the refrigerator.

TIPS

The balls will keep for around 1 week in a sealed box in the refrigerator.

Alternatively, you could roll the energy balls in poppy seeds, ground almonds, cocoa powder or other seeds.
