Feta with pesto

  • 2 garlic cloves
  • 60 g sundried tomatoes in oil
  • 30 g cashew nuts
  • 1 pinch of salt
  • 2 pinches of pepper
  • 50 ml olive oil
  • 2 packets of feta (200 g each, 21% fat)

  1. Peel the garlic cloves and drain the tomatoes. Put both into the blender jug and, with the measuring beaker in place, chop for 15 seconds/speed setting 7. Use the spatula to scrape the pieces down the inside of the blender jug. Add the cashew nuts, 1 pinch of salt and 2 pinches of pepper, and, with the measuring beaker in place, chop for 10 seconds/speed setting 6. Use the spatula to scrape the mixture down the inside of the blender jug and then repeat the process if required. Pour the olive oil into the blender jug and, with the measuring beaker in place, process for 10 seconds/speed setting 6.
  2. Place each block of feta on a piece of tinfoil and spread it with half of the pesto. Wrap up the tinfoil to create a closed parcel. Rinse out the blender jug. Place the parcels in the deep steamer basket and fill the blender jug with 1 litre of warm water. Attach the deep steamer basket to the blender jug, close the lid and cook everything with the steamer button/15 minutes.
  3. Serve the hot feta immediately.

 

TIPS

This dish goes well with crusty French bread, Mediterranean vegetables or fresh salad.

You could also cook the feta parcels on a barbecue or in the oven.
