- Pre-heat the oven to 180 °C. Melt the butter in a saucepan over a low heat, then set aside.
- Insert the mixer attachment into the blender jug, then add the egg whites. Whisk until stiff for 5 minutes/speed setting 4. After 2 minutes, add the pinch of salt and the icing sugar, a spoonful at a time, through the filler opening in the lid. Repeat this process with the flour and melted butter.
- Outline three large circles, approx. 8 cm in diameter, on a sheet of baking paper. Place the paper, unmarked side facing upward, on a baking tray. Place a generously heaped teaspoon of batter in the centre of each circle, spreading it around within the circle to make a smooth round. Do not bake more than three cookies at a time as these have to be folded into shape whilst still hot. Bake the fortune cookies on the middle shelf of the oven for 5 minutes until the edges are lightly browned. Lift the cookies off the baking tray using a palette knife, place a folded paper message in the centre of each, then fold each cookie in half, pressing the edges together firmly. Place the long, folded edge of the cookie over the rim of a glass to cool, gently pulling down the ends to give it its classic fortune cookie kink. Continue this process until all the cookie dough is used up.
