Garlic and herb butter

  • 3 garlic cloves
  • 100 g mixed herbs, e.g. parsley, chives, rosemary, thyme, coriander, mint
  • 250 g soft butter
  • zest from 1 organic lemon
  • 1½ tsp salt

  1. Peel the garlic and process in the blender jug for 8 seconds/speed setting 6. Wash the herbs, shake dry and, depending on which herb, strip off the leaves and process in the blender jug for 12 seconds/speed setting 8. Scrape down with the spatula, several times if necessary. Add the butter, lemon zest and salt and mix for 20 seconds/speed setting 4. Place the herb butter in a bowl, smooth over and chill until ready to serve. Sealed and frozen, the butter will keep for up to 3 months.
