- Rinse the orange in hot water and zest the peel. Wash the parsley, shake dry and chop roughly. Drain the chickpeas in a sieve until all the liquid has run off.
- Put the chickpeas, tahini, cold vegetable stock, lemon juice, 40 ml olive oil, salt, pepper, cumin and orange peel into the blender jug and, with the measuring beaker in place, mix for 2 minutes/speed setting 6. Drizzle the remaining olive oil on top, sprinkle with the parsley and serve.
Hummus is delicious spread on lightly toasted pitta bread.
