Indian curry dip

MAKES 2 JARS (200 G EACH)

  • 1 piece of ginger (1 cm)
  • ½ red chilli (5 g)
  • 50 g cubed mango (frozen)
  • 3 tbsp pineapple
  • 1 tbsp curry powder
  • ¼ tsp pepper
  • 1 tsp mustard
  • 1 tsp brown sugar
  • ½ tsp salt
  • 1 tbsp lime juice
  • 1 egg (medium)
  • 200 ml sunflower oil
  • 100 g crème fraîche (30% fat)

  1. First ensure that all ingredients are at room temperature. Halve and quarter the ginger, and halve, deseed and wash the chilli inside and out.
  2. Put the diced mango, pineapple juice, curry powder, ¼ teaspoon of pepper, ginger, mustard, brown sugar, ½ teaspoon of salt, the chilli pod and lime juice into the blender jug and, with the measuring beaker in place, mix for 10 seconds/speed setting 8. Then use the spatula to scrape down the inside of the blender jug. If required, mix again with the measuring beaker in place for 10 seconds/speed setting 8, then use the spatula to scrape the mixture down the inside of the blender jug.
  3. Add the egg and, with the measuring beaker in place, stir for 10 seconds/speed setting 3.
  4. Then, with the measuring beaker in place, set the appliance to 4 minutes/speed setting 4. Start the appliance and then pour the sunflower oil slowly onto the lid of the blender jug so that it drips inwards along the measuring beaker insert. Slowly increase the quantity of oil. The dip should now have a fine creamy consistency.
  5. Scrape everything down the inside of the blender jug. Add the crème fraîche and, with the measuring beaker in place, stir for 10 seconds/speed setting 4.
  6. Season the curry dip to taste with salt and pepper and, with the measuring beaker in place, stir again for 5 seconds/speed setting 4.

 

TIP

This curry dip will keep in the refrigerator for approximately 3 days.
