Lemon cake with poppy seeds

MAKES 12 SLICES (30 × 11-CM LOAF TIN)

FOR THE SPONGE:

  • juice of 2 small lemons
  • 60 g poppy seeds
  • 4 eggs
  • 200 g sugar
  • 1 pinch of salt
  • 200 g flour
  • 2 tsp baking powder
  • 200 g soft butter

PLUS:

  • fat and fine breadcrumbs, for the baking tin
  • juice of 1 lemon
  • 100 g icing sugar

  1. Pre-heat the oven to 180 °C, grease a loaf tin with butter, then dust with fine breadcrumbs. Squeeze the lemons and reserve the juice. Place the poppy seeds in the blender jug and process for 1 minute 30 seconds/speed setting 10 until finely ground. Transfer to a separate bowl and clean the container.
  2. Mix the eggs, sugar and salt for 1 minute/speed setting 4 in the blender jug until frothy. Add the flour, baking powder, butter and poppy seeds and blend for 45 seconds/speed setting 4. Add the lemon juice and mix for 2 minutes/speed setting 4. Transfer the sponge mixture into the loaf tin and bake for 50 minutes in the oven, then leave to cool.
  3. To make the icing, squeeze the lemon, then mix the juice and icing sugar into a smooth paste. When the cake is completely cool, brush the lemon icing over the cake.
