Lemon cake with poppy seeds

- Pre-heat the oven to 180 °C, grease a loaf tin with butter, then dust with fine breadcrumbs. Squeeze the lemons and reserve the juice. Place the poppy seeds in the blender jug and process for 1 minute 30 seconds/speed setting 10 until finely ground. Transfer to a separate bowl and clean the container.
- Mix the eggs, sugar and salt for 1 minute/speed setting 4 in the blender jug until frothy. Add the flour, baking powder, butter and poppy seeds and blend for 45 seconds/speed setting 4. Add the lemon juice and mix for 2 minutes/speed setting 4. Transfer the sponge mixture into the loaf tin and bake for 50 minutes in the oven, then leave to cool.
- To make the icing, squeeze the lemon, then mix the juice and icing sugar into a smooth paste. When the cake is completely cool, brush the lemon icing over the cake.
