Melt-in-the-middle chocolate cup cakes

MAKES 8 (EACH RAMEKIN 100 ML)

  • 200 g dark chocolate
  • 200 g butter
  • 6 eggs
  • 250 g sugar
  • 1 pinch of salt
  • 120 g flour
  • 40 g cocoa powder

PLUS:

  • butter, for greasing the ramekins

  1. Grease eight small ramekin dishes with butter, then place in the freezer.
  2. Pre-heat the oven to 210 °C. Place the chocolate in the blender jug and process for 5 seconds/speed setting 8. Add the butter and melt for 3 minutes/60 °C/speed setting 2. Transfer the mixture to another container, then thoroughly clean the blender jug.
  3. Place the eggs, sugar and salt in the blender jug and mix for 2 minutes/speed setting 5. Then mix for another 60 seconds/speed setting 3, slowly feeding in the chocolate-and-butter mixture through the lid opening. Add the flour and cocoa and blend for 30 seconds/speed setting 3. Spoon the mixture into the ramekins and bake in the oven on the second shelf from the bottom for 12 minutes. Serve immediately.

 

TIP:

Do not leave the baking tray in the oven during pre-heating or the ice-cold ramekin dishes may crack.
