Millet and lime salad

  • 100 g rocket salad
  • ½ bunch of parsley
  • 200 g millet
  • 400 ml vegetable stock
  • 1 red onion
  • 1 cucumber
  • 10 cocktail tomatoes
  • 200 g sheep’s milk cheese
  • juice of 2 limes
  • 6 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper

  1. Wash the rocket and parsley and shake dry. Tear the rocket into pieces and the parsley leaves from the stalks. Place both in the blender jug and process for 8 seconds/speed setting 8. Remove and then rinse the blender jug.
  2. Rinse the millet in a sieve under hot water and then place in the cooking pot. Pour the warm vegetable stock into the blender jug, put the cooking pot in place and cook for 10 minutes/100 °C/speed setting 1. Tip into a bowl and leave to swell.
  3. In the meantime, peel the onion and cut into fine slices. Peel the cucumber, remove the seeds if preferred, and dice finely. Wash the tomatoes and cut into quarters. Crumble the sheep’s milk cheese. Stir everything into the millet together with the rocket and parsley.
  4. Stir in the lime juice and olive oil and season the salad with salt and pepper. The flavour improves even more if left for at least 30 minutes to draw.
