Mornay sauce

  • 30 g flour
  • ½ l milk
  • 30 g grated cheese of choice
  • salt
  • pepper
  • cayenne pepper

  1. Place the butter in the blender jug and melt for 1 minute/90 °C/speed setting 2. Insert the mixer attachment, then add the flour and cook for 4 minutes/100 °C/speed setting 2.
  2. Add the milk and simmer for 10 minutes/90 °C/speed setting 1. After about 5 minutes, add the grated cheese, feeding it through the filler opening. Season with salt, pepper and cayenne pepper to taste.
