Pan-fried breads

  • 25 g fresh yeast
  • 1½ tsp sugar
  • 335 g plain flour (type 405)
  • 1½ tsp salt


  • plain flour (type 405) for the work surface
  • neutral-tasting oil for frying

  1. Put 175 ml water at room temperature in the blender jug, crumble in the yeast and add the sugar. With the measuring beaker in place, warm for 3 minutes/speed setting 2/37 °C.
  2. Add the sieved flour and 1½ teaspoons of salt, and, with the measuring beaker in place, process with the knead button until you have a smooth dough.
  3. Transfer the dough to a bowl, cover with a clean tea towel and leave to prove for 45 minutes at room temperature.
  4. Turn the dough out onto a lightly floured surface and divide it into 8 pieces. Shape each of these into balls, then press them flat with your hand. Heat 1 tablespoon of oil in a large frying pan and lay 4 of the flattened dough discs in it. Fry for about 6 minutes on each side until golden. Do the same with the remaining discs of dough.



These pan-fried breads taste great warm or cold.
