Pepper and tomato butter

MAKES 1 JAR (330 ML)

  • 50 g red pepper
  • 20 sun-dried tomatoes
  • 1 tbsp tomato purée
  • 250 g soft butter
  • 1 tsp salt
  • 1 tsp herbes de Provence

  1. Halve and clean the pepper and wash it inside and out. Cut it into chunks, put them in the blender jug with the sun-dried tomatoes and, with the measuring beaker in place, chop for 10 seconds/speed setting 8. Use the spatula to scrape the mixture down the inside of the blender jug. Add the tomato purée, cubed butter, salt and herbes de Provence and, with the measuring beaker in place, blend until smooth for 40 seconds/speed setting 4. Transfer the pepper and tomato butter to a bowl, spread it smooth and keep it in the fridge until you are ready to use it.
  2. If sealed, it will keep in the freezer for 3 months.
