Pick-me-up smoothie bowl with figs and nuts

  • 4 dried figs
  • 1 large orange (180 g)
  • ½ grapefruit (150 g)
  • 1 large banana (180 g)
  • 1 medium-sized pear (140 g)
  • 80 ml cold pear juice
  • 3 tbsp chopped hazelnuts
  • 4 tbsp rolled oats
  • 1 tbsp coconut chips

  1. Halve the figs, place in the blender jug and, with the measuring beaker in place, chop for 7 seconds/speed setting 8. Then decant half the quantity of chopped figs. Use the spatula to scrape the remaining figs down the inside of the blender jug.
  2. Peel the orange and the grapefruit, remove the core, divide into segments, and put into the blender jug. Peel the banana, cut into quarters and place in the blender jug. Wash and peel and quarter the pear, remove the core, cut the flesh into pieces 3 cm long and also place in the blender jug.
  3. Put the cold pear juice, 1 tablespoon of chopped hazelnuts and the oats into the blender jug, and with the measuring beaker in place, blend for 1 minute 30 seconds/speed settings 7–10 increasing the speed gradually.
  4. Use the spatula to scrape the smoothie down the inside of the blender jug and, if necessary, with the measuring beaker in place, blend the smoothie again for 30 seconds/speed setting 10.
  5. Divide the smoothie between 2 breakfast bowls and serve garnished with the coconut chips, the remaining chopped figs and the remaining chopped hazelnuts.

TIPS

You can replace the chopped hazelnuts with chopped almonds.

If you like a little extra sweetness, add mild-flavoured honey or agave syrup to your smoothie bowl.

And you could add ½ teaspoon of cinnamon with the agave syrup to the finished recipe.
