Piña Colada marmalade

MAKES 5 JARS (230 ML EACH)

  • 1.2 kg pineapple (peeled and prepared weight)
  • juice of 1 lime
  • 500 g jam sugar
  • 220 g coconut cream, sweetened
  • 4 tbsp rum

  1. Slice the pineapple into chunks. Place all the ingredients in the blender jug and process for 8 seconds/speed setting 8. Bring to a boil and simmer, setting the device to 16 minutes/100 °C/speed setting 1.
  2. Use a spoon to remove a small amount of liquid through the filler opening in the lid, trickling it onto the edge of a chilled plate. The jam is ready if the liquid does not run off the plate, forms a thin skin and wrinkles when you push it (test for setting point). Strain the jam through a sieve, then quickly transfer to jars that have been rinsed in hot water. Close the lids tightly without delay and stand upside down for 5 minutes. Leave to cool completely.

 

TIP:

Coconut cream is readily available in well-stocked supermarkets and oriental food stores. If your children want to share this jam, simply leave out the rum. It still tastes delicious even without alcohol.
