  1. Wash the plums, cut in half and remove the stones. To chop the plums, place in the blender jug and process for 9 seconds/speed setting 7. Set the timer to 3 minutes/100 °C/speed setting 2 and bring to a boil. Add the sugar, then cook for 40 minutes/120 °C/speed setting 3, leaving off the measuring beaker but placing the cooking pot on the blender jug lid to prevent splashes.
  2. Meanwhile, sterilize the preserving jars in boiling water. Fill with hot purée, then close the jar lids tightly without delay. Stand upside down for 5 minutes, then turn the right way up again and leave to cool completely.

TIP: Since the water content can vary from one plum to another, it follows that the cooking time may vary accordingly.
