- Wash the plums, cut in half and remove the stones. To chop the plums, place in the blender jug and process for 9 seconds/speed setting 7. Set the timer to 3 minutes/100 °C/speed setting 2 and bring to a boil. Add the sugar, then cook for 40 minutes/120 °C/speed setting 3, leaving off the measuring beaker but placing the cooking pot on the blender jug lid to prevent splashes.
- Meanwhile, sterilize the preserving jars in boiling water. Fill with hot purée, then close the jar lids tightly without delay. Stand upside down for 5 minutes, then turn the right way up again and leave to cool completely.
TIP: Since the water content can vary from one plum to another, it follows that the cooking time may vary accordingly.
