Potato and vegetable rösti

- Peel the potatoes, onions and celeriac, and wash and trim the carrots and courgette. Cut them all into chunks and process in the blender jug for 12 seconds/speed setting 5. Season with salt, pepper and thyme leaves, and mix for 45 seconds/speed setting 3/reverse button. If the mixture is too wet, strain it well in a sieve. Wipe the blender jug clean.
- Shape the mixture into 8 röstis and fry them in hot clarified butter until golden brown and crispy.
- To make the sauce, peel the onion and garlic, and process them in the blender jug for 8 seconds/speed setting 8. Use the spatula to scrape the mixture down from the sides of the blender jug. Add the yoghurt, crème fraîche, salt and pepper, and mix for 45 seconds/speed setting 4.
- Serve the röstis with the yoghurt cream.
