MAKES 6 SLICES (USING A TIN WITH A 28-CM DIAMETER)

FOR THE PASTRY:

  • 200 g ice-cold butter, diced
  • 225 g flour
  • 5 g salt
  • 5 g sugar

PLUS:

  • flour, for dusting the work surface

  1. Place the butter, flour, salt, sugar and 150 ml cold water in the blender jug and mix for 25 seconds/speed setting 4. Remove the pastry dough from the blender and shape into a ball. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
  2. Shape the chilled pastry into a square, then roll out into a long rectangle on a work surface dusted with flour. Fold over one side at a time into the middle so that you end up with another square consisting of three layers. Wrap in plastic wrap once again and chill for a further 30 minutes. Starting from an open end, roll out the pastry into another long rectangle, fold over the ends in a similar manner and roll out again, working from one open end to the other. Repeat this step a total of five times. If the pastry becomes too soft, chill it again in the refrigerator. Use the pastry as indicated by your chosen recipe.

PLEASE NOTE:

Depending on the size, bake for 12-25 minutes.
