Raisin-studded star cookies

  • 23 g fresh yeast
  • 250 ml milk
  • 50 g sugar
  • 125 g raisins
  • 500 g flour
  • grated zest of ½ unwaxed lemon
  • 1 pinch of salt
  • 100 g soft butter


  • flour, for dusting the work surface
  • icing sugar, for sprinkling

  1. Crumble the yeast into the blender jug, add the milk and 1 tablespoon of sugar, then heat for 3 minutes/37 °C/speed setting 2. Add all the remaining ingredients, except for the raisins, to the blender jug and process using the knead button/3 minutes until the mixture forms a smooth dough. Place the cookie dough on a floured work surface and work in the raisins. Transfer the dough to a floured bowl, cover with a damp towel and leave to rise in a warm place for 30 minutes.
  2. Knead the dough once more by hand and roll out into a sheet about 1.5 cm thick. Cut out star shapes, then arrange these on a baking sheet lined with baking paper. Cover with a damp tea towel and leave to rise for another 30 minutes.
  3. Pre-heat the oven to 200 °C and bake the star cookies for 13 minutes. Dust with icing sugar to serve.
