Red Lentil and Potato Salad

- Wash and peel the potatoes, cut them in half or into quarters and place in the cooking insert. Place the cooking insert in the mixing bowl. Pour in 500 ml of water and cook using the steamer button. Drain the potatoes, leave them to cool and then cut into slices.
- Place the lentils in a bowl and cover with boiling water. Leave to soak for at least 30 minutes, stirring from time to time. Pour off the water and leave to drain.
- Peel the onion, cut in half and purée in the mixing bowl for 6 seconds/speed setting 6. Pour in the vegetable stock and steam, without the measuring cup in place, using the roast button/5 minutes.
- Peel the cucumber and cut into slices. Slice the potatoes, add them to the lentils together with the cucumber, and mix well. Season with the onion–stock mixture, cider vinegar, celery salt and pepper. Leave the salad to draw for at least 30 minutes. Then serve garnished with chopped chives.
