Rhubarb smoothie

  • 2 sticks of rhubarb
  • 300 ml apple juice
  • 1 apple
  • 1 banana
  • 200 g strawberries (very ripe and aromatic)
  • 1 tbsp maple syrup
  • 2 tbsp crushed ice

  1. Wash and clean the rhubarb, slice into chunks, then add to the blender jug. Add the apple juice and heat for 10 minutes/80 °C/speed setting 2 until soft and tender. Meanwhile, peel the apple and banana and cut into chunks. Wash and clean the strawberries.
  2. Place the fruit in the freezer for 30 minutes, then add all the ingredients to the blender jug and purée for 45 seconds/speed setting 9. Serve immediately.


You can add a really delicious touch to this smoothie by mixing in a few fresh basil leaves: the basil will serve to intensify the strawberry flavour.
