Spelt salad with broccoli and mango

  • 200 g spelt
  • salt
  • 400 g broccoli
  • 1 mango
  • 4 tbsp olive oil
  • 2 tbsp raspberry vinegar
  • pepper
  • 50 g unsalted cashew nuts

  1. Place the spelt in a sieve and rinse under running water. Soak in cold water overnight, pour off the water and leave to drain.
  2. Place the spelt in the cooking pot, fill the blender jug with 1 litre of water and a little salt, then insert the cooking pot. Bring to a boil and simmer for 15 minutes/100 °C/speed setting 1. Place the steamer basket in the blender jug. Wash and clean the broccoli, divide into small florets and place in the deep steamer basket. Place the steamer lid on top and cook for 15 minutes/steamer button. Plunge the broccoli into cold water, then remove the cooking pot containing the spelt from the blender jug. Tip the spelt into a sieve, rinse in cold water, then set aside to cool.
  3. Peel the mango, separate the flesh from the stone and chop into little pieces. Mix the spelt with the broccoli and mango. Season to taste with olive oil, raspberry vinegar, salt and pepper. Add the cashew nuts to the blender jug, then roughly chop using the turbo button and sprinkle over the salad.
