Strawberry and coconut ice cream
- Put the lime juice, coconut syrup, icing sugar, strawberries and cream in the blender jug and, with the measuring beaker in place, blend for 30 seconds/speed setting 8. Use the spatula to scrape the mixture down the inside of the blender jug, then, with the measuring beaker in place, blend for another 10 seconds/speed setting 8.
- Divide the ice cream between 8 dessert bowls and sprinkle with the grated coconut. Decorate with a few fresh strawberries.
The ice cream can also be frozen overnight to make the consistency firmer.
