Strawberry and coconut ice cream

  • 1 lime (juice)
  • 4 tbsp coconut syrup
  • 4 tbsp icing sugar
  • 600 g strawberries (frozen)
  • 400 ml cream (min. 30% fat)


  • 6 tbsp coconut flakes
  • 16 fresh strawberries

  1. Put the lime juice, coconut syrup, icing sugar, strawberries and cream in the blender jug and, with the measuring beaker in place, blend for 30 seconds/speed setting 8. Use the spatula to scrape the mixture down the inside of the blender jug, then, with the measuring beaker in place, blend for another 10 seconds/speed setting 8.
  2. Divide the ice cream between 8 dessert bowls and sprinkle with the grated coconut. Decorate with a few fresh strawberries.


The ice cream can also be frozen overnight to make the consistency firmer.
