Strawberry & Coconut Ice Cream

  • Juice of ½ lime
  • 2 tbsp coconut syrup
  • 2 tbsp icing sugar
  • 300 g frozen strawberries
  • 200 ml cream
  • 3 tbsp desiccated coconut
  • Fresh strawberries for decoration

Instruction
Preparation time

  1. Place the lime juice, coconut syrup, icing sugar, strawberries and cream in the mixing bowl and process for 30 seconds/speed setting 8. Divide the ice cream among 4 bowls and sprinkle with desiccated coconut. Decorate with a few fresh strawberries.

TIP: The ice cream can be frozen overnight, which will give it a firmer consistency.
