Swabian Albertle biscuits

  • 225 g flour
  • 125 g cornstarch
  • tiny pinch of baking powder
  • 250 g butter
  • 1 egg
  • 125 g sugar
  • pinch of vanilla sugar
  • 2 tbsp cream


  • cocoa powder for sprinkling
  • flour for the work surface
  • butter for greasing the tins

Preparation time
5 min.
  1. Mix the flour, the cornstarch and the baking powder together and sieve into the blender jug. Add all of the other ingredients and work them into a smooth dough for 2 minutes/knead button. Wrap the dough in cling film and chill in the fridge for 1 hour.
  2. Pre-heat the oven to 175 °C (fan oven 150 °C). Roll the dough out on a floured surface until it is about 3 mm thick. Sprinkle a vegetable grater with flour and use it to press a pattern into the dough, before cutting out biscuits of different shapes. Grease as many baking trays as you need and place the biscuits on them. Bake in the oven for 12 minutes. Sprinkle with cocoa powder before serving.
