Sweet yeast dough
- Pour the milk, yeast and sugar into the blender jug, and with the measuring beaker in place, heat up for 3 seconds/speed setting 1/37 °C. Add the butter in chunks, egg, flour and salt, and with the measuring beaker in place, knead using the knead button/2 minutes to make a smooth dough. Put the yeast dough in a bowl, cover and allow to prove in a warm place for 30 minutes, until the volume has doubled.
Sweet yeast dough is suitable as a base for fruit cake, brioches, plaited yeast loaves, cinnamon buns, and much more.
The lower the yeast content and the longer the proving time, the better the taste and consistency of the baked goods will be. If there is enough time, you can use half the quantity of yeast with at least twice the proving time.
