Turkey breast skewers with mixed vegetables

  • 2 garlic cloves
  • 1 red chilli pepper
  • 1 tsp fresh ginger, finely chopped
  • ½ tsp cinnamon
  • salt
  • 1 tsp honey
  • 3 tbsp rapeseed oil
  • 400 g turkey breast
  • 350 g waxy potatoes
  • 300 g sweet potatoes
  • 250 g red pepper
  • 250 g courgette
  • 800 ml tomato purée
  • 200 ml warm vegetable stock
  • 3 pinches of pepper
  • 1 tbsp herbes de provence

  1. Peel the garlic, wash the chilli pepper, chop roughly and place in the blender jug; purée for 10 seconds/speed setting 8. Add the ginger, cinnamon, ½ teaspoon of salt, honey and oil and mix for 30 seconds/speed setting 4. Wash the turkey breasts, pat dry and cut into pieces about 5 cm in size. Combine with the marinade, place in the refrigerator and leave to marinate for at least 2 hours, ideally overnight. Rinse out the blender jug.
  2. Wash the potatoes, sweet potatoes, red pepper and courgette. Peel the potatoes and the sweet potatoes, cut them in half, or into quarters if necessary, and place in the cooking pot. Trim the red pepper and courgette. Cut the courgette into slices about 1 cm thick.
  3. Place the meat and vegetables, alternating, on the skewers. Place the skewers evenly in both steamer baskets. Place the tomato purée, the vegetable stock, 2 pinches of salt, pepper and herbes de provence, as well as the spices, in the blender jug, then add the remaining vegetables. Put the cooking pot in place, place the steamer baskets on top and cook everything using the steamer button.
  4. Serve the skewers together with the potatoes and the tomato sauce.
