Udon soup with vegetables
- Wash and peel the carrot and cut into 5-mm slices. Trim the button mushrooms and cut into quarters. Wash and trim the spring onions and cut into fine rings. Put a third of the rings to one side.
- Put the hot miso stock into the blender jug with the soy sauce and the vegetables and, with the measuring beaker in place, bring to the boil with the reverse button/5 minutes/speed setting 1/130 °C.
- Remove the measuring beaker and boil the soup with the reverse button/time according to noodle packet instructions + 1 minute/speed setting 1/100 °C. Once the machine is operating, add the pre-cooked noodles to the blender jug through the lid opening.
- Pour the soup into soup bowls and serve sprinkled with the remaining spring onions.
The soup can be supplemented with cooked chicken, strips of beef, prawns or tofu. You can also vary the vegetables as and how you wish.
