- Cut the vanilla pod in half, slit it open, then prise the two halves apart slightly. Half-fill a screw-top jar with sugar, add the pieces of vanilla pod, then top up with the remaining sugar. Shake the jar thoroughly and leave to infuse for 2 days.
- Place the mixture of vanilla pod and sugar in the blender jug and process for 10 seconds/speed setting 8. Return the vanilla sugar to the jar and store in a dry place until required.
1 teaspoon of homemade vanilla sugar is the equivalent of 3 teaspoons of shop-bought vanilla sugar.
