Yoghurt rolls

MAKES 10 SMALL ROLLS

  • 350 g flour (type 550)
  • 230 g yoghurt (3.5% fat)
  • 1 sachet of baking powder (15 g)
  • 70 ml mild vegetable oil
  • 1 tsp salt
  • 1 tsp baking malt

PLUS:

  • 3 tbsp milk (fresh whole milk, 3.5% fat)
  • 5 tbsp poppy seeds
  • flour for the work surface

  1. Pre-heat the oven to 180 °C, and line a baking sheet with greaseproof paper. With the measuring beaker in place, knead the flour, yogurt, baking powder, oil, salt and baking malt with the knead button/2 minutes.
  2. Put the dough on a floured work surface and, if necessary, knead in a little more flour. Divide into 10 pieces, shape them into balls and put them on the prepared baking sheet with distance between each one. Brush with milk and sprinkle with poppy seeds. Bake the rolls for 15 minutes until golden. If the rolls look a little too pale, extend the baking time if necessary.

TIP

You can find baking malt in well-stocked supermarkets and health food shops. It improves the crumb and helps the dough rise better.
